“ My mom and I have been here twice now and our second visit was definitely the highlight of our visits. We ordered the jicama orange salad (no red onions), the asparagus bisque, cheese curds, and the braised short rib for the entree. The salad was delicate and light, a perfect start to dinner. The cheese curds and bisque were simple yet filling (highly recommend the curds and salad since the bisque was the weekly special). The real star of the show was the braised short rib. We had trouble deciding between that and the buffalo flank steak but had Kimberly, our fantastic waitress, who said the short rib was her favorite. 18 hours of braising and out came the most tender, flavorful short rib we've ever had. I can't compliment it enough. We finished it before we even thought to take a picture. The receipts also offer a QR code to pay, which is super handy if you want to leave after eating. A highly recommended staple in Fairplay! We'll be back! ”

“ Was suspicious at the quality of the food here because to me the pictures just looked alright but seeing the huge amount of people lining up outside of the restaurant prior to being opened made me think that there must be something good about this place. Once we got there, we were seated immediately and were warned about how there's only one waitress and one cook available. Rightfully so, our food took awhile but I'm amazed at how hard working they are to keep the business going with such little staff. Once we got our food, I thought my Santa Fe burger was going to be bland. Turns out, it was one of the best and juiciest burgers I've ever had!! There is something magical about that patty that made me constantly think about it for the rest of our car ride to Santa Fe because it was just so dang delicious and fluffy I was like HOW?! it was so good I just couldn't stop eating! It's one of those foods you have to tell yourself to stop and breathe. The green Chile was tasty, but super spicy to me so it must mean that it's mega authentic for those who are braver with spicy stuff. My fiancé liked his elk jalapeño sausage. He said the only thing that made it difficult to eat was the bun because it was apparently too crispy but still enjoyed it. Overall GREAT place and I can't wait to come back to get another burger l. ”
“ After a long day, a great place and a good meal we're what was needed. Salado is exactly what I needed. I sat at the bar enjoying a Breckenridge gin and tonic while deciding on an entree. I decided on the Venison with asparagus and mashed potato's. It was delicious, the sauce had a slight tang to it that complimented the dish very well. The venison cooked medium was tender and flavorful. The mashed potato's were not mashed smooth, a texture I enjoy and the asparagus was cooked just right, with a slight satisfying crunch when I bit into it. I would most certainly recommend enjoying a meal here ”

“ Stopped through on a Colorado road trip. We didn't realize there was an event in town that day, very busy. As with every place we stopped on this trip there were staffing issues. However, they were up front with us which was appreciated. They said there was a wait to get in, but the food would be prompt when seated, which turned out to be true. I found the staff was friendly and the food was great. My friends had burgers which they enjoyed, I had a taco that was served on Indian flat bread. I'd stop again if I was headed that direction. ”
